Mediterranean Chicken and Zucchini

I am one of those people who think that eggs can be too "eggy" and chicken can be too "chickeny," but this recipe... I can have it every day and not get sick of it. It is THAT good!

This recipe is so easy to make, it is perfect for busy weeknights or meal prep for the week ahead! It goes great with rice, but you can choose which carbohydrate you add.

While this recipe is very simple, you can easily customize it with additional ingredients. This recipe would be great with artichokes, carrots, pesto pasta, leeks, sumac salad... so many options!

GLUTEN FREE - DAIRY FREE RECIPE

Chicken Ingredients:

  • 1 lb chicken, cut in half horizontally
  • 2 tbsp Al Amir garlic spread
  • 1 tbsp za'atar
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika

Zucchini Ingredients:

  • 2 big zucchini
  • 1 tbsp Al Amir garlic spread
  • 1/2 tbsp za'atar
  • 1/2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1 tsp red pepper flakes

GLUTEN FREE - DAIRY FREE - LOW FODMAP RECIPE

Chicken Ingredients:

  • 1 lb chicken
  • 2 tbsp garlic-infused olive oil
  • 1 tbsp za'atar
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika

Zucchini Ingredients:

  • 2 big zucchini
  • 1 tbsp garlic-infused olive oil
  • 1/2 tbsp za'atar
  • 1/2 tbsp lemon juice
  • 1 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika

    INSTRUCTIONS:

    Chicken Instructions:

    • Cut the chicken in half horizontally, and add it to a baking dish with olive oil.
    • Sprinkle the salt, pepper, and paprika on the chicken and rub it in. 
      • I cheat and add it to one side, and then, using gloves, I spread it around the chicken.
    • Add za'atar, lemon, and garlic sauce to a small bowl and mix to combine.
    • Drizzle over chicken, making sure to cover all of it.
    • Bake at 350° for 20 - 30 minutes, checking the temperature before removing.
    • Let it sit for 10 minutes before serving.

    Zucchini Instructions:

    • Wash the zucchini in a water and vinegar solution and rinse.
    • Cut zucchini into wedges and add to a saucepan with olive oil.
    • Add all other ingredients to the pan and toss to combine.
    • Cook zucchini until fork tender, don't overcook as I did, or they will be a tad mushy. 

    Putting the Recipe Together:

    • You can serve this dish with rice, potatoes, or another carb like pesto pasta!
