Tahini Salmon Salad - Packaged to Plate

Packaged to Plate: a series for all of us who cannot safely eat fast food but still deserve quick and delicious meals.

I love tinned tuna and have eaten it as long as I can remember, so why was I so surprised to learn that I love tinned salmon? I had never thought about it before until I was looking at tinned fish at Trader Joe's, inspired by Justine Doiron's love for it, and there it was! A cute little pink tin of salmon.

This salmon salad is much like my other recipes, highly customizable based on your preferences or what you have on hand. I hope you try it and find some fun new combinations!

GLUTEN FREE - DAIRY FREE - LOW FODMAP RECIPE

Max one serving to remain low FODMAP

Ingredients:

  • 2 cans of tinned salmon
  • 3 mini peppers
  • 3 tbsp tahini
  • 1 1/2 tbsp lemon juice
  • 1 tbsp dill
  • 3 tbsp capers
  • salt

INSTRUCTIONS:

Salmon Salad Instructions:

  • Wash mini peppers and dill in a solution of water and vinegar and set aside.
  • Remove the salmon from the tins and add it to a mixing bowl.
  • Finely chop the dill and dice the mini peppers into small pieces. Add both to the bowl with the salmon.
  • Add capers and a pinch of salt.

Tahini Dressing Instructions:

  • The trick with tahini is to mix until your arm hurts and to add water slowly.
  • In a small mixing bowl, add the tahini, garlic, and lemon.
  • Using a fork or whisk, mix until combined and starts to thicken. This will happen quickly.
  • As it thickens, slowly add in cold water, a little at a time, mixing between each addition.
  • Keep going until the tahini reaches your desired consistency. And then mix some more!

Putting the Recipe Together:

  • Pour the tahini into the salmon bowl and mix until everything is evenly coated.
  • I had this salad with crackers, but it's also great in a sandwich, salad bowl, or stuffed into a pita.
  • Enjoy!
