Packaged to Plate: a series for all of us who cannot safely eat fast food but still deserve quick and delicious meals.
It has been tough to navigate life with an abundance of food allergies, but one of the hardest things is finding good, healthy, and quick meals. When life gets busy, you don't always have time to meal prep or make a home-cooked meal. Sometimes you need something quick and delicious. But when you have food allergies, finding this combo is not always an option.
I have been on a mission to create delicious meals that are easy to make for those moments when I am starving but don't have the energy, time, or desire to cook. Introducing the Carnitas Burrito using Trader Joe's delicious premade carnitas!

GLUTEN FREE - DAIRY FREE RECIPE
Carnitas Burrito Ingredients:
- 1/2 package Trader Joe's precooked traditional carnitas (or any precooked meat of your choice)
- 4 tbsp Trader Joe's chimichurri sauce
- 2 tbsp Al-Amir garlic sauce
- 1 cup leftover rice (or any carb of your choice like potatoes or quinoa)
- 4 mini bell peppers
- 1/2 can of corn
- 1 cup of lettuce
- 1 tomato
- b free sweet potato wrap (or any wrap of your choice)
GLUTEN FREE - DAIRY FREE - LOW FODMAP RECIPE
Max one serving to remain low FODMAP

INSTRUCTIONS:
Carnitas Burrito Instructions
- Wash all the veggies in a solution of water and vinegar. Rinse and set aside to dry.
- Chop the carnitas into cubes and heat them in a saucepan over medium heat. If using tofu instead, heat it the same way.
- While the carnitas or tofu is warming, prepare the veggies.
- Dice the bell peppers, lettuce, and tomato into small pieces and set aside along with the corn.
- Optional: I like to remove the seeds from the tomatoes to keep the burritos from getting too watery.
- Heat the rice (or carb of choice) just until heated through. It should be warm, not hot.
- Add the warmed carnitas or tofu, rice (or other carb), chimichurri sauce, and garlic sauce to a bowl. Mix until everything is well combined.
Putting the Recipe Together:
- Spoon a layer of your rice mixture onto a sweet potato wrap, then top with the veggies.
- Tightly roll it into a burrito.
- Starting with the seam side down, toast both sides in a saucepan over medium heat until crispy.
