These tacos were made out of necessity, but they taste like they were made in a fully stocked kitchen. They are flavor-packed, filling, and somehow still light.

GLUTEN FREE - DAIRY FREE RECIPE
Lingcod Taco Ingredients:
- 4 corn tortillas
- 1/2 lb lingcod or fish of your choice
- 6-8 radishes
- garlic sauce (Al Amir is the best)
- 1/2 cup avocado oil
- 1 tsp sumac
- 1 tsp za'atar or Italian seasoning
- 1 tsp garlic powder
- 1 cup arugula
- salt and pepper
GLUTEN FREE - DAIRY FREE - LOW FODMAP RECIPE
Lingcod Taco Ingredients:
- 4 corn tortillas
- 1/2 lb lingcod or fish of your choice
- 6-8 radishes
- 1/4 cup mayo
- 2 tsp garlic-infused oil
- 1 tsp lemon juice
- 1/2 cup avocado oil
- 1 tsp sumac
- 1 tsp za'atar or Italian seasoning
- 1 tsp garlic powder
- 1 cup arugula
- salt and pepper
INSTRUCTIONS:
Lingcod Taco Instructions:
- In a small bowl, mix together sumac, za'atar, and garlic powder.
- Sprinkle the spice blend evenly over both sides of fish and gently rub it in.
- Heat a pan over medium heat with half of the oil.
- Add the fish and cook for 3-5 minutes per side, making sure it reaches an internal temperature of 145°F. Set aside.
- Warm the tortillas in a dry pan over medium heat, about 1-2 minutes per side. Set aside.
Radish Salad Instructions:
- Wash radishes in a solution of water and vinegar.
- Trim the ends and dice into small pieces.
- In a mixing bowl, add the garlic sauce or, for low FODMAP, combine mayo, garlic-infused oil, and lemon juice.
- Add the radishes to the mixture and mix.
Arugula Salad Instructions:
- Wash arugula in a solution of water and vinegar.
- Pat dry with a paper towel or clean kitchen towel.
- Add the arugula to a mixing bowl along with the remaining oil, salt, and pepper.
- Toss until evenly coated.
Putting the Recipe Together:
- Grab a tortilla and add a piece of fish.
- Spoon on the radish salad, then top it off with the arugula.
