We love this dish as a side with just about any protein or dressed up to be the main dish. We have enjoyed these potatoes with our tofu kebabs, and we have had them as a main with chicken and a salad. You can't go wrong with any combination.

GLUTEN FREE - DAIRY FREE - VEGAN RECIPE

Batata Harra Ingredients:

  • 6 gold potatoes
  • 3 tbsp olive oil
  • 2 tsp minced garlic
  • 1 tsp red pepper flakes
  • 2 tsp turmeric
  • 1 lime
  • 1 cup cilantro
  • 1 cup parsley
  • 1 cup dill
  • salt and pepper to taste

GLUTEN FREE - DAIRY FREE - LOW FODMAP - VEGAN RECIPE

Batata Harra Ingredients:

  • 6 gold potatoes
  • 3 tbsp garlic-infused olive oil
  • 1 tsp red pepper flakes
  • 2 tsp turmeric
  • 1 lime
  • 1 cup cilantro
  • 1 cup parsley
  • 1 cup dill
  • salt and pepper to taste

INSTRUCTIONS:

Batata Harra Instructions:

  • Peel potatoes and boil for 10 minutes until cooked through but firm.
  • Drain and let cool briefly then cut into bite sized pieces
  • Heat oil in a pan and stir in garlic, red pepper flakes and coriander. Cook for 2-3 minutes.
  • Add turmeric and juice of 1 lime and mix.
  • Toss in the potatoes and mix well.
  • Add in half of your cilantro, parsley, and dill and cook for another 4 minutes.
  • Add salt and pepper as desired. 
  • Remove from heat and add the remaining herbs and give it a good mix. 
  • Enjoy!
