Nothing feels more like home that having a tater tot casserole! It is the definition of comfort food and so easy to make! We love making them and having them in the freezer for those cold nights when we don't want to cook.

This recipe is packed with flavor and doesn't need much to go with it. If you want to add some other dishes, we would pair this with a caesar or cobb salad, roasted vegetables, or a vegetable soup. You can't go wrong with whatever you pair with it because the casserole will always be the star.

There are a lot of modifications you can make with this dish depending on your allergies or what you have in your cupboard. We have used peas instead of corn, vegan meat substitute instead of beef, and we even added zucchini one time and it was delicious! With so many combinations and so much flexibility, there is nothing you won't love about this dish.

We are dedicated to making recipes that anyone can enjoy, no matter what allergies or restrictions you have. For this recipe, it is gluten free and we have a variation that is also dairy free and vegan. Unfortunately, due to the ingredients it is not low FODMAP.

GLUTEN FREE RECIPE

Casserole Ingredients:

  • 1/2 lb beef
  • 1 can corn
  • 1 lb tater tots
  • 1 cup milk
  • 2 tsp hot sauce
  • 8 oz sour cream
  • 3 tsp flour
  • 3 tbsp butter
  • 5 oz cheese
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic
  • 1 tsp salt
  • 1 tsp pepper

GLUTEN FREE, DAIRY FREE, & VEGAN RECIPE

Casserole Ingredients:

  • 1/2 lb fake beef - beyond meat or impossible burger works great
  • 1 can corn
  • 1 lb tater tots
  • 1 cup almond milk
  • 2 tsp hot sauce
  • 8 oz dairy free sour cream (we like Kite Hill)
  • 3 tsp gluten free flour (we use Bob's Red Mill)
  • 3 tbsp vegan butter (Earth Balance is good)
  • 5 oz dairy free cheese (Violife is the best)
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic
  • 1 tsp salt
  • 1 tsp pepper

    INSTRUCTIONS:

    Casserole Instructions:

    • Preheat oven to 350° and prep a baking dish with spray olive oil or butter.
    • Add the beef and garlic to a pan and cook over medium heat until the beef is browned.
    • Add corn and seasonings to the pan and cook for 2 minutes or until well combined.
    • In a separate pan, heat the butter and once melted whisk in the four. Let the flour taste cook off for a few minutes, whisking so it doesn't burn.
    • Add in milk, whisk and cook until thick.
    • Mix in the sour cream and then the beef mixture until well combined.
    • In your baking dish, add in the beef mixture, top with cheese, and then tater tots.
    • Bake for 45 minutes for until tater tots are browned and the cheese is plenty melted.
