What’s better than meatloaf when you're tired, it's cold outside, or it's simply a day that ends in “y”? This cozy classic hits every time. This recipe comes from my Nana, slightly updated to be dairy-free and gluten-free — but don’t worry, the rich, nostalgic flavor hasn’t gone anywhere. Once you try it, you won’t be looking for another meatloaf recipe again.

We love to pair it with the classics: mashed potatoes and green beans. But my all-time favorite way to have meatloaf is the next day on a sandwich! You can also serve it with a crisp salad, tahini carrots, or roasted Brussels sprouts. And if mashed potatoes aren’t your thing (wild, but okay), try it with home fries or rice — though let’s be real, mashed potatoes still win.

GLUTEN FREE - DAIRY FREE RECIPE

Meatloaf Ingredients:

  • 1 lb ground beef (can substitute for turkey)
  • 4 eggs
  • 1 cup gluten free oats
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup chopped onion
  • 2 tsp garlic

Meatloaf Dressing Ingredients:

  • 1/3 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard

GLUTEN FREE - DAIRY FREE - LOW FODMAP RECIPE

Meatloaf Ingredients:

  • 1 lb ground beef (can substitute for turkey)
  • 4 eggs
  • 1 cup gluten free oats
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp leeks (more if you only use the green part)
  • 2 tsp garlic shoots

Meatloaf Dressing Ingredients:

  • 1/3 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard

      INSTRUCTIONS:

      Meatloaf Instructions:

      • Mix all the meatloaf ingredients.
      • Grease a loaf pan (or really any baking dish, I have used everything) and put the meatloaf mixture in it.
      • Mix the dressing ingredients and spread on top of the meatloaf.
      • Cook at 300° for an hour (check the middle to make sure it is done, depending on the dish, it may need longer).
      • Let sit for 10 minutes before serving.
