What is better than meatloaf when you are tired, or the weather is cold, or it is a day that ends in y... it is good all the time! This recipe was my nana's that we adjusted a bit to meet some basic allergens - dairy free and gluten free. But it does not change the amazing flavor. Once you try this meatloaf, you won't look any further for an exceptional meatloaf recipe!
Now we obviously love to pair this with the classics of mashed potatoes and green beans but it is even better the next day on a sandwich! You can also pair it with a lovely salad, tahini carrots, or brussel sprouts and instead of mashed potatoes you could do home fries or rice (but mashed potatoes is unmatched).
We are dedicated to making recipes that anyone can enjoy, no matter what allergies or restrictions you have. For this recipe, it is gluten free and dairy free but we have also provided a substitute recipe that is also low FODMAP.
GF & DF RECIPE - GF, DF, LOW FODMAP RECIPE
GLUTEN FREE - DAIRY FREE RECIPE
Meatloaf Ingredients:
- 1 lb ground beef (can substitute for turkey)
- 4 eggs
- 1 cup gluten free oats
- 1 tsp salt
- 1 tsp pepper
- 1 cup chopped onion
- 2 tsp garlic
Meatloaf Dressing Ingredients:
- 1/3 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp mustard
GLUTEN FREE - DAIRY FREE - LOW FODMAP RECIPE
Meatloaf Ingredients:
- 1 lb ground beef (can substitute for turkey)
- 4 eggs
- 1 cup gluten free oats
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp leeks (more if you only use the green part)
- 2 tsp garlic shoots
Meatloaf Dressing Ingredients:
- 1/3 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp mustard
INSTRUCTIONS:
Meatloaf Instructions:
- Mix all meatloaf ingredients together.
- Grease a loaf pan (or really any baking dish, I have used everything) and put the meatloaf mixture in it.
- Mix the dressing ingredients and spread on top of the meatloaf.
- Cook at 300 ° for an hour (check middle to make sure it is done, depending on the dish it may need longer).
- Let sit for 10 minutes before serving.
