"Breaded" Black Cod - Beach Edition

Beach Edition: seafood-focused meals made with the limited ingredients you have while on vacation.
This recipe is inspired by one of my favorite recipe developers, Justine Doiron. She comes up with the most incredible ideas, and her take on "breaded" fish really got me thinking!
My husband and I spent the weekend at the beach and stopped by a local fish market, where we picked up the most delicious black cod. We absolutely love this fish fried, so we wanted to try it using this new breaded method — and oh my goodness, she's a genius! The result was light and flavorful, with an unforgettable crunch!
We served it, of course, with mashed potatoes (because... mashed potatoes!) and a simple arugula salad that brought a refreshing balance to the meal.
Since we were cooking at the beach, I didn't have access to my full kitchen or all my usual ingredients. If I were at home, I would have finished the dish with fresh lemon and parsley — but even without them, it was amazing!

GLUTEN FREE - DAIRY FREE RECIPE
Black Cod Ingredients:
- 2 lbs black cod
- 1 tbsp dairy free butter
- 1 tbsp avocado oil
- 1 tbsp sumac
- 1 tbsp za'atar
- 1/2 tbsp parsley
- 1/2 tbsp garlic powder
- 1 tsp paprika
- 1 tsp pepper
- 1 tsp salt
- Optional: fresh lemon and parsley
Mashed Potato Ingredients:
- 6 russet potatoes (or 4 large ones)
- 1/4 cup almond milk
- 1/4 cup dairy free butter
- 1 tbsp paprika
- salt and pepper
Arugula Salad Ingredients:
- 2 cups arugula
- 1/4 cup dairy free feta cheese
- 2 tbsp avocado oil
- sprinkle of salt, pepper, and paprika
Breadcrumbs Ingredients:
- 4 pieces gluten free bread
- 1 tbsp avocado oil
- 1 tbsp za'atar

Black Cod Ingredients:

INSTRUCTIONS:
Black Cod Instructions:
- If you got a fresh filet, remove the skin and bones and cut into filets.
- I prefer to mix all of my spices in a small container and then season the fish but you can sprinkle them directly on the fish if that is easier for you.
- Heat a pan on medium with avocado oil and butter.
- Fry the fish on both sides for about 5 minutes each.
- Check temp and remove when the filets reach 145 °.
- Set aside.
Mashed Potato Instructions:
- Peel and chop potatoes into chunks.
- Add to a pot of water and set to boil. Depending on how long your water takes to boil, the potatoes should take 10-15 minutes.
- I do not wait until they are fork tender, I wait until they're easily smashed with a fork — very, very soft.
- Once cooked, strain potatoes and add back to pot.
- Mash potatoes with a potato masher or mixer.
- Add butter, almond milk, and seasoning and mix until combined.
- Taste and adjust seasoning as needed.
Arugula Salad Instructions:

Make while potatoes are boiling
- Wash arugula and pat dry.
- Break arugula in half with your hands before adding to a bowl.
- Drizzle avocado oil and seasoning over arugula and mix.
- Sprinkle with feta cheese and set aside.
Breadcrumb Instructions:
- Make while potatoes are boiling
- Cut the bread into very small pieces, or use a food processor to get them as fine as possible.
- Add bread to a hot pan with oil and sauté until golden brown, stirring occasionally to break up the pieces.
Putting the Recipe Together:
- Start by adding a few scoops of mashed potatoes onto a plate and shape into a circular disk.
- Top the mashed potatoes with your fish, and then add the "breading" on top of the fish.
- Pair with a side of the arugula salad.
