I love a classic coleslaw but this new street corn coleslaw recipe we developed is insane! It is so easy to make and delicious, it will quickly become a staple in your home. We meal prep a salad each week and this recipe is always on rotation.

This is the dish we bring to any potluck or group event and without fail we are asked for the recipe every time. It is that good. 

We love this recipe as a side dish to accompany just about any protein you make. We also love to dress it up a bit with some chicken for a great lunch. Or if you are looking for a light snack, this is perfect.

GLUTEN FREE - DAIRY FREE RECIPE

Coleslaw Ingredients:

  • 1/2 head green cabbage
  • 1 jalapeno
  • 1 can corn
  • 1 container dairy free feta (Follow Your Heart feta is our favorite but Violife is a close second)

Dressing Ingredients:

  • 1 cup mayo or dairy free yogurt
  • 1 - 2 tbsp lime juice
  • 1/2 - 1 tbsp chili powder
  • 1/4 cup parsley
  • 2 tsp garlic
  • salt and pepper

GLUTEN FREE - DAIRY FREE - VEGAN - LOW FODMAP RECIPE

Coleslaw Ingredients:

  • 1/2 head green cabbage
  • 1 jalapeno
  • 1 can corn
  • 1 container dairy free feta (Follow Your Heart feta is our favorite but Violife is a close second)

Dressing Ingredients:

  • 1 cup vegan mayo or dairy free yogurt
  • 1 - 2 tbsp lime juice
  • 1/2 - 1 tbsp chili powder
  • 1/4 cup parsley
  • 2 tsp garlic-infused olive oil or skip
  • salt and pepper

    INSTRUCTIONS:

    Coleslaw Instructions:

    • Wash cabbage and jalapeno.
    • Cut cabbage as thinly as you can and add to a bowl.
    • Chop your jalapeno into coins (if you like it spicy) or diced (less spice) and add to the cabbage mixture.
    • Add canned corn and feta cheese to the bowl and set aside.

    Dressing Instructions:

    • Combine all ingredients into a bowl and mix. 
    • Taste and adjust accordingly.

    Putting the Recipe Together:

    • Add your dressing to the coleslaw and mix until well combined. 
    • Enjoy!
