We’re big salad fans in this house! Whether we’re mixing up ingredients or dreaming up new combinations, salads are always on the menu. But no matter how many versions we try, one thing’s for sure — nothing beats a classic Asian chicken salad.

It’s fresh, crunchy, flavorful, and endlessly customizable. This salad recipe is the perfect foundation for adding ingredients based on what you have in the fridge, what you're craving, or any dietary restrictions. Along with the crisp cucumber and vibrant peppers, we love tossing in cabbage, carrots, radishes, and of course — avocado! However, you make it your own, we’re sure you’ll love it as much as we do.

GF & DF RECIPE - GF, DF, LOW FODMAP RECIPE

GLUTEN FREE - DAIRY FREE RECIPE

Chicken Marinade Ingredients:

  • 1 lb chicken thighs
  • 1 tbsp sesame oil
  • 1 tbsp gluten free soy sauce (we like Tamari)
  • 2 tsp garlic
  • 1 tsp sugar
  • 1 tbsp rice vinegar

Salad Ingredients:

  • 2 heads of romaine lettuce
  • 3 Persian cucumbers or 1 regular cucumber
  • 4 mini peppers or one big pepper

Dressing Ingredients:

  • 3 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp gluten free soy sauce (we like Tamari)
  • 1 tbsp sugar
  • 1 tsp garlic
  • handful of sesame seeds
  • sprinkle of red pepper flakes if you like it spicy

Chicken Marinade Ingredients:

  • 1 lb chicken thighs

  • 1 tbsp gluten free soy sauce (we like Tamari)
  • 2 tsp garlic
  • 1 tsp sugar
  • 1 tbsp rice vinegar

Salad Ingredients:

  • 3 persian cucumbers or 1 regular cucumber
  • 4 mini peppers or one big pepper

Dressing Ingredients:

  • 3 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp gluten free soy sauce (we like Tamari)
  • 1 tbsp sugar
  • handful of sesame seeds

    INSTRUCTIONS:

    Chicken Instructions:

    • Marinate your chicken in the ingredients above for at least 30 minutes. 
    • We prefer to BBQ our chicken, but cook it however you like and set it aside to rest. 
    • After the chicken has rested for 10 minutes, slice it into long strips and set aside.

    Salad Instructions:

    • Wash all your veggies and set them aside to dry.
    • Cut your lettuce, cucumbers, and peppers, and add them to a bowl. I like to cut them into small strips so everything is roughly the same size.

    Dressing Instructions:

    • Add all ingredients to a mixing bowl and mix until combined. 
    • Taste and adjust as needed.

    Putting the Recipe Together:

    • Top your salad with the chicken and drizzle the dressing on top. 
    • Toss to combine if you'd like, or serve as is.
    • Enjoy!
