Our beet and feta salad is so refreshing and so easy to make! With just a few ingredients, you will want to make this dish for every occasion... which we do.

This salad is on rotation in our weekly meal prep because it goes well with so many things. We love to have it as a snack but it is great as a side dish with a hearty dinner like roasted chicken or a BBQ with all of the other classic sides.

We have gotten away with making this salad without some of the ingredients and it totally works but is so much better with all of the ingredients. So feel free to customize if you don't have everything.

However you have this salad, we are pretty positive you will love it!

GLUTEN FREE - DAIRY FREE RECIPE

Salad Ingredients:

  • 1 can pickled beets
  • 3 radishes
  • 1/2 container dairy free feta cheese (Follow Your Heart is the best but Violife is a close second)
  • 1/2 bunch parsley

Dressing Ingredients:

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp garlic
  • 1 tsp sugar
  • salt and pepper

GLUTEN FREE - DAIRY FREE - VEGAN - LOW FODMAP RECIPE

Salad Ingredients:

  • 1 can pickled beets (max 1/3 cup per serving for low FODMAP)
  • 3 radishes
  • 1/2 container dairy free feta cheese (Follow Your Heart is the best but Violife is a close second)
    • the low FODMAP amount for this product is unknown so I cannot advise on the appropriate amount. 
  • 1/2 bunch parsley

Dressing Ingredients:

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp sugar
  • salt and pepper

    INSTRUCTIONS:

    Salad Instructions:

    • Wash your parsley and radishes in a solution of water and vinegar. Make sure to scrub any dirt off the radishes and set aside. 
    • Add the beets to a mixing bowl, cutting any really big ones in half if you want to.
    • Cut radishes into discs and finely chop the parsley, adding both to the bowl.
    • Sprinkle with feta cheese, use as much as you would like.

    Dressing Instructions:

    • Add all ingredients to the veggie bowl and mix. 

    Putting the Recipe Together:

    • Taste and adjust flavor as needed. Sometimes you need some more lemon juice or sugar.
    • Enjoy!
