We absolutely love this orzo pasta! We have it all the time in the summer but it is great all year long. Our favorite part of this recipe is the endless combinations you can do, you can easily change the ingredients based on what you're craving or what you have in your fridge. 

This salad makes an excellent side dish but you can easily dress it up with some protein to make it a main dish. This is always on our meal prep list for when we go camping or any trip where we need a nutritious meal at the ready.

We are dedicated to making recipes that anyone can enjoy, no matter what allergies or restrictions you have. This recipe is gluten and dairy free, but we have also provided a substitute recipe that is also low FODMAP and vegan.

GLUTEN FREE - DAIRY FREE RECIPE

Pasta Ingredients:

  • 1 package gluten free orzo pasta (our favorite is DeLallo)
  • 1/2 cup artichokes 
  • 1/4 cup red onion
  • 1/2 cup tomatoes
  • 1/2 cucumbers
  • 1/2 cup kalamata olives
  • 1/2 cup red bell pepper
  • 1 container dairy free feta cheese (Follow Your Heart is the best but Violife is a close second)

Dressing Ingredients:

  • 1/2 lemon
  • 1/2 cup basil (or other herbs you have)
  • 1/3 cup avocado or olive oil
  • 1 tbsp honey
  • 1 tbsp dijon mustard
  • 2 tbsp white wine vinegar (red would be delicious too)
  • salt and pepper

Other Great Ingredients:

  • avocado
  • radishes
  • tofu
  • chicken
  • corn
  • sundried tomatoes
  • jalapeno

Pasta Ingredients:

  • 1 package gluten free orzo pasta (our favorite is DeLallo)
  • 1/3 cup artichokes 
  • 1/2 cup tomatoes
  • 1/2 cucumbers
  • 1/2 cup kalamata olives
  • 1/2 cup red bell pepper
  • 1 container dairy free feta cheese (Follow Your Heart is the best but Violife is a close second)

Dressing Ingredients:

  • 1/2 lemon
  • 1/2 cup basil (or other herbs you have)
  • 1/3 cup avocado or olive oil
  • 1 tbsp sugar
  • 1 tbsp dijon mustard
  • 2 tbsp white wine vinegar (red would be delicious too)
  • salt and pepper

    INSTRUCTIONS:

    Pasta Instructions:

    • Cook the pasta, toss with a bit of oil, and let cool.
    • Wash your veggies and cut them into bite-sized pieces, all close to the same size if possible.
    • Add the veggies to the pasta, top with feta cheese and the dressing. 
    • Give it a good mix and taste for any additional seasoning. 
    • Enjoy!

    Dressing Instructions:

    • Add all ingredients to a container and whisk or blend with an immersion blender (this way is best).
    • Mix or blend, taste, and top your salad with it!
