Bohemian Potato Salad

We love a potato salad and have created a few different versions that are all delicious but the Bohemian Potato Salad is just so unique! This recipe was inspired by Pinterest, of course, and the ingredients in our fridge at the time. It is easy, delicious, and flavor packed!

We love this potato salad because it has ingredients that some people might not put together so it is surprising AND delicious! But the best thing about this recipe is how unbelievably good it is.

We love to have this recipe as a side for dinner, a main for lunch, or even a base for eggs in the morning. The versatility make the combinations endless! 

However you have this potato salad, we are pretty positive you will love it!

We are dedicated to making recipes that anyone can enjoy, no matter what allergies or restrictions you have. For this recipe, it is gluten free and dairy free but we have also provided a substitute recipe that is also vegan and low FODMAP.

GLUTEN FREE - DAIRY FREE RECIPE

Potato Salad Ingredients:

  • 10 small gold potatoes
  • 1 can of black olives
  • 1 big avocado or 2 small avocados

Dressing Ingredients:

  • 1/4 cup mayo
  • 3 tbsp sriracha or hot sauce of choice
  • Optional: 1 tsp rice wine vinegar

GLUTEN FREE - DAIRY FREE - VEGAN - LOW FODMAP RECIPE

Potato Salad Ingredients:

  • 10 small gold potatoes
  • 1 can of black olives
  • 1 big avocado or 2 small avocados

Dressing Ingredients: for low FODMAP, you can eat 1/3 of the sauce per meal

  • 1/4 cup vegan mayo
  • 3 tbsp sriracha or hot sauce of choice
  • Optional: 1 tsp rice wine vinegar

    INSTRUCTIONS:

    Potato Salad Instructions:

    • Peel and cut your gold potatoes into fourths.
    • Preheat the oven to 450 ° and line a baking dish with parchment paper or spray with oil. Add potatoes to the baking dish and cook for 20 minutes or until fork-tender and crispy.
    • While the potatoes are cooking, cut your avocado and olives into cubes and set aside.
    • Once the potatoes are done, let them cool for 5 minutes.

    Dressing Instructions:

    • Add mayo and sriracha (or hot sauce of choice) to a bowl and mix. You can add the optional rice wine vinegar. If you haven't had it before, I recommend it, but both ways are great. 
    • Taste and adjust accordingly.

    Putting the Recipe Together:

    • Before assembling, you have to choose whether you want your salad stacked or mixed. I like it stacked, but mixed is great, too.
    • For stacked, get a serving bowl and add your potatoes, avocado, and olives in layers. Spoon on the spicy mayo on top.
    • For mixed, add the potatoes, avocado, and olives to a mixing bowl. Top with spicy mayo and mix thoroughly. Place potato salad in a serving bowl.
    • Enjoy!
