Tahini Chicken Salad

My friend Lydia is not only a saint but also an amazing cook! She has a Lebanese restaurant, Al-Amir, in Portland, Oregon, that has the most incredible food! She also runs an incredible organization, Our Giving Table, that helps children in foster care and underprivileged homes get the necessities they need to live a healthy and happy life. She is truly incredible.

This recipe all started with her teaching me how to make tahini sauce... the right way! After that, I started putting it on everything — and I mean everything! Salads, meats, pastas, you name it! One of our favorite ways to spice up a chicken salad is to have the base be tahini. This one is a recent concoction that I am obsessed with. I hope you enjoy it too!

Now don't be fooled, I can never make tahini quite like Lydia so if you live in Oregon or are ever in Portland, you MUST stop by Al-Amir and try their amazing food! Everything is delicious but make sure you get the Khudar, Salata Al-Amir, Krydis, and rice at the very least!

GF & DF RECIPE - GF, DF, LOW FODMAP RECIPE

GLUTEN FREE - DAIRY FREE RECIPE

Salad Ingredients:

  • 1 rotisserie chicken (you can also cook up some chicken breasts or thighs)
  • 2 - 4 radishes
    • Other veggie options: bell peppers, carrots, or diced cabbage

Dressing Ingredients:

  • 1/3 cup tahini
  • 3 tbsp lemon
  • 4 - 6 tbsp water
  • 2 tbsp garlic
  • 1 tbsp dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp za'atar seasoning

Note: this recipe can be done with tahini, lemon, water, and garlic only. Tahini doesn't need anything additional added to make it amazing so if you don't have dijon, ACV, or za'atar seasoning, leave it all out and I promise you will love it!


GLUTEN FREE - DAIRY FREE - LOW FODMAP RECIPE

Salad Ingredients:

  • 1 rotisserie chicken (you can also cook up some chicken breasts or thighs)
  • 2 - 4 radishes
    • Other veggie options: bell peppers, carrots, or diced cabbage

Dressing Ingredients:

  • 2 tbsp tahini (low FODMAP restriction instructions below)
  • 3 tbsp lemon
  • 4 - 6 tbsp water
  • 1 tbsp dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp za'atar seasoning

    INSTRUCTIONS:

    Salad Instructions:

    • Remove all chicken from your rotisserie chicken and cut into bite-sized pieces. 
    • Wash veggies and chop into bite-sized pieces.
    • Add both to a mixing bowl.

    Dressing Instructions:

    • Start by adding your tahini, lemon, and garlic to a bowl and slowly mix. 
    • Very quickly it will get thick, start adding water a tbsp at a time. 
    • Add water and mix until well combined and a nice consistency that is not too runny or too thick.
    • Now add in your other seasoning ingredients and mix until well combined.

    Putting the Recipe Together:

    • Top your chicken and veggies with the sauce and mix until well combined.
    • Taste and adjust seasonings as needed.
    • Enjoy!
