Chicken salads are often forgotten for just how good they are! But not in this house. We love a chicken salad, but even more, we are obsessed with our chicken curry salad! It takes the classic chicken salad up a notch and packs a punch of flavor.

This recipe is great because you can customize it so many ways based on what you are craving, your allergies, or what ingredients you have in the house. We love mixing it up and trying new ingredients when we have them.

This salad is great as a meal prep item to have in the fridge, ready to eat quickly. It also makes an excellent lunch on a sandwich, on a bed of greens, or with tortilla chips. 

However you have this salad, we are pretty positive you will love it!

GLUTEN FREE - DAIRY FREE RECIPE

Salad Ingredients:

  • 2 cups diced chicken (we love using a rotisserie chicken)
  • 1 cup chopped veggies
    • veggie ideas: radishes (our favorite), peppers, jalapenos, onion, green onion, tomatoes, parsley

Dressing Ingredients:

  • 1/2 cup dairy free yogurt or mayo
  • 1 tbsp lime juice
  • 1 tsp garlic
  • 2 tsp curry powder
  • salt and pepper

GLUTEN FREE - DAIRY FREE - VEGAN - LOW FODMAP RECIPE

Salad Ingredients:

  • 2 cups diced chicken (we love using a rotisserie chicken)
  • 1 cup chopped veggies
    • veggie ideas: radishes (our favorite), peppers, jalapenos (1 small for low FODMAP), tomatoes, parsley

Dressing Ingredients:

  • 1/2 cup dairy free yogurt or vegan mayo
  • 1 tbsp lime juice
  • 2 tsp curry powder
  • salt and pepper

    INSTRUCTIONS:

    • Wash your veggies in a solution of water and vinegar and set aside. 
    • Dice your chicken into bite-sized pieces and add to a mixing bowl.
    • Dice your veggies and add to the bowl.
    • In a smaller bowl, combine your dressing ingredients. Taste and adjust as needed.
    • Add your dressing to your chicken and veggies and mix until well combined. 
    • We serve this on a sandwich, on a bed of lettuce, or with tortilla chips.
    • Enjoy!
