Street corn... but in a pasta! My husband is obsessed with this pasta salad recipe, along with everyone else who tries it. It is that good!
We love a great recipe base that you can spice up with fun new ingredients and this one is no exception. Like most of our dishes, it is easily customizable based on what you have in the fridge, your current cravings, or your allergies! Any way you have it, it will be delicious.

Pasta Ingredients:
- 1 box gluten free pasta (we love Barilla rotini)
- 3 cups corn
- 2 large avocados
- 1/2 bunch cilantro
- 1 jalapeno
- 1/2 cup black beans
- 1/2 cup bell peppers (we love using red and orange)
Dressing Ingredients:
- 1/2 cup mayo
- 3 tbsp lime juice
- 1/2 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- 1 tsp sriracha
- salt and pepper
GLUTEN FREE - DAIRY FREE - LOW FODMAP RECIPE
To remain low FODMAP, you can have 1/4 of the recipe per meal.

INSTRUCTIONS:
Pasta Instructions:
- Wash your jalapeno and cilantro in a solution of water and vinegar and set aside.
- Cook pasta by following the directions on the box. Once cooked, drain and add to a mixing bowl with a drizzle of olive oil and set aside to cool.
- Dice the jalapeno and cilantro and add to the pasta bowl.
- Add your corn, avocado, and black beans to the bowl as well.
Dressing Instructions:
- Combine all ingredients and mix. Taste and adjust as needed.
Putting the Recipe Together:
- Add the dressing to the pasta bowl and mix thoroughly. Taste and adjust as needed.
- Transfer to a serving dish.
